He knows how to fold, of course, when to call it quits, but here and now, there's no risk to require it, none that he can see. She's beautiful, she's intriguing, and what's more, she's fun, something he can always go with more of. (There's plenty to be had with Emma, of course, but he's never been a one-woman man, and wouldn't expect her to count on as much.) The mention of stakes only emphasizes that, makes him all the more inclined to agree to her offer.
